Traditional Roman cuisine is evocative, artisanal and joyful. It is a tribute to seasonality, to freshness and to simplicity. Its deeply satisfying flavours tell a story of love for the land, of growing and farming expertise passed down through the generations and of respect for nature. A culture of sharing food and taking time to celebrate the heavenly earthly pleasures of lovingly prepared food and drink is fundamental to Rome’s culinary scene.

Chef Antonio Vitale brings Michelin star standards to Hotel d’Inghilterra’s restaurant kitchen. Prior to joining us, his culinary journey was an impressive one. It started in Italy at two-starred Locanda Solarola in Castel Guelfo, Bologna and one-starred La Voglia Matta in Fusignano.
He then moved to Lisbon to join the Il Cipriani team at the Lapa Palace, and Malta at the Palazzo Parise before coming back to Italy to work on the creation of Hotel Caruso in Ravello and at Venice’s Ristorante Aromi. As he embraces Rome’s venerable cuisine heritage, his honed craft, creative spirit and passion for ingredients shines through every dish.
