Dining out is part of the Italian lifestyle and has to be embraced wholeheartedly. The enticing offerings of Florentine osterie, trattorias and ristoranti are typical of modern Italian cities: a compound menu of humble, traditional Tuscan cooking and innovative explorations based on those same time-honoured staples. In this way, favoured ingredients are invariably locally sourced, and dishes are likely to embrace, in one form or another, four key elements: meat, olive oil, homemade bread and wine. History, art and food are the cornerstones of our city, and gastronomic aficionados will not be disappointed.

In exquisite contrast to the Hotel’s heritage, our head chef, Roberto Cordisco, is one of the youngest in Florence. Brilliantly talented, he brings a fresh and exciting approach to Italian classics that makes Hostaria Bibendum a magnet for Florence’s foodie set.
His dazzling creative flair was kindled at Michelin star restaurants both here and in Milan, but it’s our own diners who are experiencing the complete picture of Roberto’s art. True to his country, he is zealous about his use of local and seasonal produce – he is, after all, a genuine Tuscan cook at heart.
