Head Chef of La Loggia, Nicola Negretto, developed a passion for cooking at an early age. His apprenticeship and first professional roles took him to the Venetian town of Asiago where he fell in love with the products and flavours of the region. His menus show a deep connection with the area of Vicenza, showcasing the very best local and seasonal products with special attention paid to minimising food miles.
Nicola also has a particular passion for pastry, and he perfected his knowledge of the craft by attending a number of advanced training courses under the great masters of the trade. He specialises in working with leavened dough and delights in creating bread, cakes and pastries for special occasions such as the traditional Italian sweet loaves Panettone and Pandoro.
