Italy has an unquestionably strong food identity, and the world has hungrily embraced our defining dishes. However, the cuisine of our Northern Italian region has a particular set of favoured ingredients which sets us apart. Firstly, there is a distinct change in emphasis from meat to vegetables, which results in a lighter style of fare, with white asparagus and radicchio heading the list of abundant local crops.
Veneto also goes against the grain by valuing polenta and rice alongside pasta; creamy risottos are a highlight of the region’s menus. Veneto has also given us many great contributions to the sweet selection, with tiramisù being our enduring gift to dessert lovers. In wine terms, we often surprise visitors with our wealth of world-famous varieties, including Bardolino, Soave and Prosecco.

Head Chef of La Loggia, Nicola Negretto, developed a passion for cooking at an early age. His apprenticeship and first professional roles took him to the Venetian town of Asiago where he fell in love with the products and flavours of the region. His menus show a deep connection with the area of Vicenza, showcasing the very best local and seasonal products with special attention paid to minimising food miles.
Nicola also has a particular passion for pastry, and he perfected his knowledge of the craft by attending a number of advanced training courses under the great masters of the trade. He specialises in working with leavened dough and delights in creating bread, cakes and pastries for special occasions such as the traditional Italian sweet loaves Panettone and Pandoro.
